Every Tuesday is Taco Tuesday in our house! Carson and I wanted to show you how to make this delicious cashew queso to put on EVERYTHING! We put it on tacos, fajitas, quesadillas, breakfast burritos, potatoes, chili… the possibilities are endless!
Ingredients:
1 cup soaked cashews (soaked in hot water for at least 10 minutes, or at room temperature for about an hour)
1 cup water
1 tbs. nutritional yeast
1 tsp. smoked paprika
2 tea. cumin
1 tbs. jalapeño juice (from jar)
5-6 jalapeño slices (from jar)
1 tsp. garlic powder (or 3 cloves of fresh)
salt to taste
Variations:
Mix up your spices! Try using chipotle peppers, chili powder, or diced green chilies.
