Black Bean Soup with Cashew Queso!

1 yellow onion ⠀
2 carrots ⠀
3 stalks of celery ⠀
1 yellow pepper⠀
4 cans of black beans (drained & rinsed)⠀
1 can of fire roasted tomatoes ⠀
1.5 tbs. cumin ⠀
1 tbs. chili powder ⠀
2 tsp. smoked paprika ⠀
1 tsp. garlic powder ⠀
1 tsp. onion powder⠀
1 tbs. dried cilantro⠀
2-4 cups of water (preference)⠀
Salt and pepper to taste 

Sauté onion, celery, carrots and peppers. Add tomatoes, beans, seasoning and water. Bring to a boil, then simmer for 30 minutes. *Add leftover cashew queso to each bowl! (See previous post on how to make queso)

Serves 6
